The washed coffee is highly sought after for its acidity and citric taste. The unwashed type has a honey sweet connotation, well balanced body and acidity. Its raw appearance is a medium sized round beans.
YIRGACHEFFE
LOCATION: SOUTHERN NATIONS, NATIONALITIES, AND PEOPLE’S REGION
ALT. 2,000-2,500 METERS
PREPARATION: WASHED GRADE 1 & 2 UNWASHED 3 & 4
It has a flowery aroma and a sweet jasmine flavor accompanied with a sharp acidity and body.
Yirgacheffe is regarded as one of the best coffee in the world.
LEKEMPTI
LOCATION: WESTERN ETHIOPIA,
OROMIA REGION
ALT. 1,500-1,800 METERS
PREPARATION: UNWASHED 4 & 5
Lekempti beans are one of the largest in size among other Ethiopian varieties. It has a mild sweet fruity taste. This variety is available in unwashed preparations.
HARAR
LOCATION: EASTERN ETHIOPIA,
OROMIA REGION
ALT: 1,800-2,700 METERS
PREPARATION: UNWASHED GRADE 4
Harrar beans are elongated (long Berries) with a yellowish tint that gives Harrar the coffee the name golden beans. Harrar is characterized for its mocha flavor, accompanied with winey and fruity taste with a balanced acidity and body.

The coffee, although grown in the Djimmah area, it is has a different characters from the Djimmah variety. It is characterized by a flowery fragrance accompanied by a spicy and winey flavor.

ALT. 1,300-1,800 METERS
PREPARATION: UNWASHED 4 & 5
It is one of the largest export variety of Ethiopia. Djimmah beans are available in unwashed preparations and are characterized by balanced body and acidity.
